He cooks every recipe in a home kitchen — the same setup you have — so if a dish claims to be ready in 15 minutes, it’s because it actually was. His job is simple: find the fastest honest path to a meal that’s genuinely worth eating, then write it down clearly enough that anyone can follow it on their busiest night.

Anas is the co-founder and editor of Nourished in a Hurry and the author of five healthy-eating recipe books. Over the past several years he has built healthy-cooking communities on Facebook and Instagram with more than one million combined followers — real home cooks whose feedback directly shapes the recipes published here. Before any recipe goes live, Anas tests it and edits it for clarity, so what you read has been through two kitchens, not one.
