15-Minute Beef and Broccoli

A 15-minute beef and broccoli made with thinly sliced flank steak. A quick soy-cornstarch coating, crisp-tender broccoli and a savory, glossy sauce, with no long marinade.

Ingredients
  

  • 1 lb flank steak thinly sliced against the grain
  • 1 tbsp low-sodium soy sauce
  • 1 tbsp cornstarch
  • 1 tbsp neutral cooking oil
  • 4 cups small broccoli florets
  • 2 tbsp water as needed
Sauce
  • ¼ cup low-sodium soy sauce
  • 2 tbsp water
  • 1 tbsp oyster sauce
  • 1 tbsp rice vinegar
  • 2 tsp brown sugar
  • 1 tsp toasted sesame oil
  • 2 garlic cloves minced
  • 1 tsp grated ginger
  • 1 tsp cornstarch
  • Optional: ¼-½ tsp red-pepper flakes
Garnish: green onions, sesame seeds

Equipment

  • Large skillet or wok

Method
 

  1. Whisk the sauce ingredients in a small bowl.
  2. Toss the sliced beef with 1 tbsp soy sauce and 1 tbsp cornstarch.
  3. Heat a large skillet or wok over medium-high heat; add the oil.
  4. Sear the beef in a single layer 3-4 minutes total, then move to a plate.
  5. Add broccoli and 2 tbsp water, cover and cook 2-3 minutes until bright green and crisp-tender.
  6. Return the beef and re-whisk the sauce, then pour it in.
  7. Toss about 1 minute until glossy.
  8. Garnish and serve immediately.

Notes

  • No long marinade needed.
  • Flank steak is preferred; slice against the grain.
  • Don't overcrowd the pan; cook in batches if doubling.
  • Fresh broccoli is preferred for texture.
  • Raw rice won't cook in 15 minutes; use pre-cooked or microwave rice to keep the total-meal promise.
