Ingredients
  

Main:
  • 1 pound lean ground pork or ground chicken/turkey
  • 1 14-16 oz bag coleslaw mix
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 3 green onions sliced
  • 1 tablespoon avocado oil
Sauce:
  • 3 tablespoons low-sodium soy sauce
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon rice vinegar
  • 1 teaspoon sriracha optional
Garnish:
  • Sesame seeds
  • Extra green onions
  • Chili flakes optional

Method
 

  1. Heat avocado oil in a large skillet over medium-high heat. Add the ground pork and cook for 4-5 minutes,breaking it into small crumbles until browned and cooked through.
  2. If needed drain excess grease, leaving about 1 tablespoon in the pan for flavor.
  3. Stir in the garlic and ginger.Cook for 30-60 seconds until fragrant.
  4. Add the coleslaw mix and toss well.Cook for 3-4 minutes until the cabbage is just tender but still slightly crisp.
  5. Pour in the soy sauce,sesame oil,rice vinegar and sriracha.Stir until everything is evenly coated.
  6. Cook for another minute remove from the heat then top with green onions and sesame seeds before serving.

Notes

  • Don't overcook the cabbage-it should retain a slight crunch.
  • Brown the meat well before adding vegetables for the best flavor.
  • Use toasted sesame oil at the end to preserve its aroma.
  • Taste before adding extra soy sauce,different brands vary in saltiness.
